I'm always looking for breakfast solutions that incorporate a combination of high-quality protein, fats and veggies into my morning routine but that don't require a huge time commitment... enter Salmon Pesto Toast! I just pop a slice of gluten-free bread in the toaster, and layer it with mixed greens, smoked salmon and top it off with a dollop of pesto. This gives me everything I need to start my day off right... a great source of protein, healthy fats with omega-3 fatty acids in the salmon and extra-virgin olive oil in the pesto, along with a nice dose of fiber and antioxidants in the greens. You can feel feel free to mix this recipe up by adding sliced tomatoes, sprouted greens and avocados, or by varying the protein source. What will you toast up today? :-)
